The Science Behind Tallow
If you've landed here, you're probably somewhere between "I keep hearing about beef tallow on TikTok" and "is this actually legit or are we all just rubbing beef fat on our faces for fun?"
Fair question. Let's get into it.
I started The Talö Company post-PCOS diagnosis, I got obsessive about reading ingredient lists - and the more I learned, the more one ingredient kept coming back around. Not because it was trendy. Because it's one of the oldest skincare ingredients in the world, and the newest research finally explains why it works so well.
So grab your tea. Class is in session.
First — what actually is tallow?
Tallow is rendered beef fat. Specifically, at Talö, we use suet — the hard, pure fat that sits around the kidneys of a cow. It's the cleanest, most nutrient-dense fat on the animal, and it's what traditional skincare has used for literally thousands of years (think: ancient Egyptians, medieval balms, your great-grandmother's hand salve).
When we render it slowly, filter it, and whip it with a handful of organic botanicals, what you get is a moisturizer that looks like fluffy frosting and feels like your skin exhales.
But here's the part your skin cares about: tallow's fatty acid profile is shockingly close to the lipids your own skin already makes.
The "bioidentical" thing isn't marketing fluff
Your skin's outer layer (the stratum corneum, if we're being fancy) is held together by a blend of fatty acids, cholesterol, and ceramides. That's your skin barrier. When it's intact, your skin holds moisture, keeps bacteria out, and generally behaves. When it's compromised, you get redness, dryness, flaking, breakouts, eczema flares — the full catastrophe.
Tallow's composition, especially from 100% grass-fed cattle, contains:
- Oleic acid (~40–50%) — the same monounsaturated fat found in olive oil and, importantly, in human sebum.
- Palmitic acid (~20–30%) — a saturated fat your skin produces on its own and uses for barrier repair.
- Stearic acid (~15–25%) — supports barrier structure; emollient; softens without suffocating.
- Linoleic acid — an omega-6 essential fatty acid linked in clinical studies to reduced comedone size and suppressed inflammatory cytokines.
- Conjugated Linoleic Acid (CLA) — mostly found in grass-fed tallow, with documented anti-inflammatory and antimicrobial activity.
A 2024 peer-reviewed scoping review published in Cureus on tallow's biocompatibility with skin (Alqam et al.) concluded that tallow's fatty acid composition is structurally similar to human skin lipids, making it highly biocompatible and recognizable to the skin. The paper noted that palmitic and stearic acids support stratum corneum lipid recovery in ex vivo models, and linoleic acid can suppress inflammatory pathways.
Translation: your skin doesn't have to "figure out" how to use tallow. It already speaks the language.
The vitamins — and why fat-soluble matters
Tallow is naturally rich in the four fat-soluble vitamins:
Vitamin A (retinol precursors): supports cell turnover and skin renewal. This is the same family of compounds your prescription retinoid is trying to mimic — just delivered in its whole-food form, gently.
Vitamin D: regulatory role in skin cell growth and immune function.
Vitamin E (tocopherols): a powerful antioxidant that protects lipids from oxidative damage. It's also why tallow is naturally shelf-stable.
Vitamin K: supports circulation and capillary health; sometimes associated with brightening under-eye areas.
Here's what most people miss: these vitamins are fat-soluble, meaning they need fat to be absorbed. Water-based serums can't deliver them effectively. A whipped tallow cream? That's the ideal delivery vehicle.
Grass-fed vs. grain-fed — it's not just a marketing label
This is where sourcing genuinely matters.
Cattle raised on pasture, eating what cows actually evolved to eat, produce fat with a fundamentally different nutrient profile than cattle fed corn and soy in a feedlot:
- Significantly higher CLA content (the anti-inflammatory compound).
- More vitamin A and E (up to 3–5× higher in grass-fed beef fat in some studies).
- A better omega-3 to omega-6 ratio. Grain-fed fat is skewed toward pro-inflammatory omega-6; grass-fed shifts closer to the ratio your skin and body prefer.
- More stable, less prone to oxidation over time.
Every product at Talö is made from 100% Canadian grass-fed and grass-finished suet. ("Grass-finished" matters — some cattle graze pasture for part of their lives and get grain-fattened at the end, which undoes a lot of the nutrient benefit.)
What about the dermatologists who say it clogs pores?
Let's be fair: there's real debate in dermatology about tallow, and any honest conversation has to include it.
A 2025 analysis in the Journal of Cosmetic Dermatology reviewed tallow-based skincare claims on social media and pointed out — correctly — that most online claims about tallow haven't been tested in long-term controlled trials. That's a legitimate critique of the claims, not of the ingredient itself.
Tallow does sit on the comedogenic scale (around a 2 out of 5, which is considered low-to-moderate). Here's what that means practically:
- For dry, sensitive, reactive, or mature skin: tallow is often a life-changing moisturizer.
- For eczema, rosacea, and barrier-damaged skin: the emerging research is genuinely promising, especially with grass-fed CLA content.
- For actively oily or cystic-acne-prone skin: start with a pea-sized amount on the body or dry patches before committing to it as a face moisturizer. Everyone's skin is different.
This is why we don't pretend tallow is a cure-all. It's a phenomenal moisturizer for the right skin — and you're the only one who knows what your skin is telling you.
How to actually use it (the part nobody tells you)
If you're new to tallow, two tips will change your experience:
- Use a pea-sized amount. It's concentrated. Scooping out a fingerful and slathering it on is the #1 reason people say "it felt greasy." Warm a tiny amount between your fingertips until it turns into an oil, then press — don't rub — it into damp, just-cleansed skin.
- Apply to slightly damp skin. The thin film of water helps the tallow emulsify on contact and absorb in seconds instead of sitting on top.
Give it two weeks. Your barrier rebuilds on roughly a 28-day cycle, so real changes — less reactivity, more bounce, that "plush" feeling — show up by week three or four, not day one.
The short version
Beef tallow works because it isn't pretending to be something new. It's the closest thing to your skin's own protective fats that nature makes. Grass-fed, properly rendered, minimally processed tallow delivers fatty acids and vitamins your skin already knows how to use — no pathway to figure out, no bioavailability gymnastics, no synthetic scaffolding.
